Honestly, you're just describing the actual sport. In all 34 league matches, Bayern basically plays against opponents that hoof the ball forward whenever they can. These teams are not interested in having a midfield, they are not interested in having ball possession for more than a few seconds.
I think the core problem of many people here is that they don't like the direction the actual sport has taken.
We are all entitled to our opinions. But this generalisation about modern football... You cannot be serious.
In the very genuine hope - sincerely - of getting you to see how your bias is affecting your judgement here, I've just typed "best goals 2021" into YouTube and this is the first clip:
Let's break down each of the first five goals.
(Notice how they're generally all struck from range because the scorer can't break through the midfield and/or defence alone, BTW.)
1)
Maddison. Defender is close enough to almost block the shot, because he is pressing. Maddison is also being pressed by a midfielder. As the shot flies, you can see Barnes being tracked
all the way into the box by the defender. Very little room for Leicester to play in... The reason Maddison is shooting from so far out, is that
he can't get through the midfield or the defence...
The "modern direction of the actual sport" (a bereft midfield) that you describe is not on show here.
Nor could you manually control all those defending players at once in FIFA, to make them all press (and nor would any "quick tactic" option achieve this with any actual success).
2)
Pogba. Three West Ham defenders bunch together between the D of the box. They are incredibly tightly packed, not spread over practically the entire width of the pitch, because the danger is in the middle.
That's what defenders do!!! But crucially,
not in FIFA. Once again, you can't even force that to happen because you can only control one player at once, and the defensive AI does nothing, because "eSport".
Why is he shooting from range? Because
he can't break through the defenders. There are no huge gaps between them all. They're covering the danger zone perfectly - but the shot is perfection.
3)
Son. When he scores, an opposing midfielder is 2-3ft away from him (though not engaging him). The midfielder to his right is blocking a passing lane. That midfielder is
not, crucially,
standing there watching. Or standing further up the pitch, ready to counter. You wouldn't do that when this situation is developing.
4)
Lanzini. Being pressed by an opponent. A V-shape of six defenders, with an extra guy in the middle, trying to block the shot. In FIFA you'd have a back line spread out, all players except one ignoring the play, with one man (who you control) pressing, and midfielders getting ready to counter. Which does not represent real football when such a dangerous situation has developed - this clip is very clearly
impossible to recreate in FIFA without you playing with five mates.
5)
Salah. Free kick. Tempted to skip this one, because you never get a free kick in FIFA against the AI (because the gaps are so wide, and players so fast, you never get close enough to anyone for that to happen).
But watch the close-up replay. There's a tight wall of four defenders blocking the goal itself. Again,
you simply cannot do that in FIFA (and nor does the AI) because you can only control one player, and the other three will spread out for all those "1v1 battles".
So...
My challenge to you.
Based on the latest 10-second snippet of FIFA 22 gameplay.
Show me
several clips from the 2020/2021 season, at the top level, of a player running, UNCHALLENGED, from his own half through an entirely empty midfield, where the entire opposition is running away from the oncoming player(s) at all times and never press the runner for a SECOND, despite the opposition having an entire defensive line back and in-front of the goalkeeper.
Because that's FIFA. Non-stop counter attacks all game long with no midfield battles and no physical contact between players (thanks to the HUGE gaps all over the pitch). Which
isn't football. Modern football or otherwise. It's Fortniteball. Designed to hook you on how easy it is to score.

EDIT: Look, a valid argument is "FIFA has to condense a 90 minute game into 10 minutes, some things can't be realistic or every game would be 0-0, and this is just how they make games exciting now". But "FIFA represents modern football and you old dinosaurs just don't get it" is total, easily proveable bollocks.
