Sure, on your PS3 menu screen go to 'Game', then go to 'Game Data Utility', scroll through all the patches on your PS3 for all your games and you'll find the PES2013 1.1 patch somewhere there. Just select it and delete it, and voila. Patch removed, nothing else should be affected.
Alternatively, if you're on 360, just select 'System settings', then select 'Memory', highlight 'Hard Drive', then press Y. From here, select 'Clear System Cache' to remove the patch. On 360 it will remove all patches from all games on your console, but the rest can obviously be re-downloaded.

To answer your question, my OF just has kits and emblems changed for all the current leagues in the game, all the made up teams like PES Utd are still there as I didn't want Championship clubs etc to be there as they'd then be included in the ML Div2 league no matter which nation you play in. I don't really want to have Championship teams being promoted into La Liga for example, so I just got the basic file.
Because the OF was an early one released, way before data pack 2, then it doesn't include any transfers, made up players, stat alterations, nothing. I just wanted the kits etc with the rest of the game being as it was out of the box. I then planned to just get the transfer updates via data pack 2, but I downloaded it and think Konami screwed up a lot of the player selections etc, so I just decided to go with the game as it is out of the box and make my own alterations. It doesn't take that long, using a list from various official league websites you can quickly change around a lot of players. I only did the most famous ones and left the majority of the teams as they are, as frankly, barring the most famous teams I haven't heard of half the players anyways!
