Perhaps the difference between demo code and full game is due to them trying to balance things for online, screwing it up trying to please everyone.
This is absolutely spot on in my opinion. I've always maintained that you can't make a game engine that can simultaneously cater for both offline and online. It forces the game to compromise from both sides.
I think most other types of game can handle the transition from single player to online easily because they are extremely separate from one another. Online versions of shooters have their own unique maps, modes etc, as do adventure games like Mass Effect 3 or Unchartered. Online doesn't interfere with the main offline story/adventure.
PES suffers from having the offline and online modes use the same engine. Alter one thing to cater for an offline AI issue, see as that then becomes a weakness that can be exploited online. It's a never ending cycle of compromise between the two modes.
The game was definitely stronger when they focused most of their energy into offline. Sure, there was always local multiplayer like 1v1 but I don't think it was as much as an issue to them back then.
