I've played some more matches with both demo's now.
I like both games, i agree that PES is less fluid than FIFA...
There is something weird with both games: PES is easier to dribble but i keep winning FIFA games and haven't succeded in winning one single PES game (on the same difficulty, the highest).
My biggest gripe is the stutter. I hope this only happens in the demo. I had it 5 times in one half...which is a lot. Sometimes i don't understand Konami. They have a game which used to be the critics and harcore fans' favourite. It goed downhill next gen and then the latest installment is this giant leap forward, but they have demo with a stutter..this is extremely annoying.
I'm getting used to the new defense system. But when i have the full game i shall have to read the manual carefully...it's 3 years since i've been playing PES on an almost daily basis, i have forgotten lots of things.
One other thing: when you pass it's like the ball rolls in mud...the way the ball stops feels not very natural to me on a normal pitch...i'm getting used to this and it's not a big gripe, but still it isn't like it should be...
I will buy both games. I usually end up playing one for 90% of the time, this has been FIFA for a couple of years...i'm not sure now.
