wouldn't surprise me if the PC demo was later than consoles, last year it was so early Jenkey had hacked most of the game to be available by August.

Different engine, different game, different editing tools and assets. Last years deal can't be done with this demo.

From what I could gather they're using Fox Engine's toolset (the one shown on its tech demo) as well, so there's a high chance the entire filesystem is different.

Apart from this, I'm concerned for the full game.
If it's Steam only, I suppose we will be able to edit rosters/names/appearances as they're stored in the EDIT file in the Documents folder (assuming paths/file formats won't change) but... Will we be able to edit kits/balls/boots which are in the .img files or, even more difficult I believe, the .exe to attach a kitserver (should one be available and should there be the need) or to alter gameplay (should there be the need)?

I know that with FIFA (which from FIFA 12 on is Origin-only if I recall correctly) is possible to edit .big and .bh files (and it also has a kind of "afs2fs" structure included) but I have no experience in modding Steam games.

Also I wouldnt be surprised if the PC demo got delayed until mid September due to the modding fiasco of PES2013. But I have no doubt that all formats will be released on the same day.

Why the big deal of the PC demo modding? Did Konami lose sales because of it? Did they make an official statement about the PC demo "fiasco"?

They do not .No body will stay on demo if he can have full game! They lose money from torrents , bad online modes , bad offline modes and bad games. For PC ,average user have chose , first to try it full version , then to buy it.

They delayed the 2nd PES2013 demo on PC untill release day because of modding. I sincerly hope PES2014 demo releases on PC same day as consoles. Dying to see the power of FOX on a high end PC.

Licensing deals were revealed by looking at the demo content before KONAMI was able to officially announce them. I guess the PC demo will be released after KONAMI's gamescom press conference.

If that's the reason that a lot of people commit piracy, then why don't the developers allow a full game to be unlocked for a limited period of time? That way, a gamer can try the full game as opposed to a demo which may or may not represent the full game - but would still have to cough up if they wish to play the game for any length of time?
