Unplayable Teams?

I would like to know if you can play with the star sign teams? best players in England, Spain, Italy Netherlands etc, I might be answering my own question here but I dont think so, but why have teams you can play in the ML on the off season, but not when you want an exhibition? teams like bald players, tall players, dribblers defenders etc..

anyone want to confirm if you can play with these teams without going into ML??
