You can't delete your profile but you can create a new one:
After logging in you will see "Select Player File" screen. There, you can select 2nd or 3rd box and you can create a new account with a brand new nickname.

The ability to delete an old profile was taken away as cheaters on PES5 kept changing their name to avoid detection by other online users. However, if Konami actually bothered to ban cheats by voiding those serial/cd-key's then we would be able to create new profiles, but hey, this is Konami we are talking about.
